Paleo Powder Spinach and Eggs
A quick, healthy and hearty Paleo breakfast recipe to get your morning started right...
INGREDIENTS:
- 1 Tbsp coconut oil
- 1 1/2 - 2 cups fresh spinach
- 1-2 Tbsp Paleo Powder Herbed
- 3 eggs
- 1 Tbsp almond milk (optional)
- 1/2 Tbsp Paleo Powder Pink (or Original or Salt Free)
DIRECTIONS:
- Preheat medium skillet on medium-high heat
- Oil skillet with coconut oil
- When oil is melted, add spinach and Paleo Powder Herbed; cook until spinach is wilted
- Optional: While spinach is cooking, whisk eggs with milk (almond milk suggested but most substitutes will work)
- Reduce to low-medium heat
- Add eggs (or egg mixture) and Paleo Powder Pink to skillet; scramble by gently folding until eggs still slightly shiny; remove from heat and let eggs continue to set for about five minutes
- Serve
